| Octopus Potato Salad |
Ingredients:
Fresh octopus about (1/2 a pound but not more than 1 pound)
Red potatoes (diced, boiled) (I boil the potatoes with sea salt and garlic)
Ancho Chili powder
Old bay season
Olive Oil or truffle OO flavor
Sea Salt and pepper to taste
1/2 chopped garlic clove
Green onions for garnish
Procedure:
Boil the potatoes al dente
Set them aside to rest
The octopus should be boiling at this point
Note: if you parboil it becomes rubbery, and we want a soft texture and easy to the bite
Once the octopus becomes soft, set it aside to rest for about 20 minutes
Cut the octopus into bite size pieces
Add the octopus to the potatoes
and the ingredients below
Ingredients:
Salt and Pepper to taste
A pinch of Old Bay season for crab cakes (about 1/4 spoon)
A pinch of Ancho Chili power
Lemon Juice (about a tbs spoon)
Chopped garlic
EVOO or a drop of truffle OO flavor (Truffle flavored oils are strong in taste, use it moderately)
Let the salad rest for all flavors to blend together
Garnish it with green onions and one slice of lime
(I was going to use cilantro but didn’t have any)
